Most people cannot take the celery juice full strength
If the skin is sufficiently cleared at the end of the second week use may be made of the natural cereals with cream (nut cream or soybean milk is best) for breakfast in the place of the broth and salad. The use of the sub-acid fruits may be continued. For at least two weeks a glass of raw vegetable juice is taken one hour before dinner and lunch or with the meal. Most people cannot take the celery juice full strength; in such cases it should be diluted half with water. This is made fresh daily and kept in a cool place. All may be used but choose particularly those high in vitamin A, B, C and G. Consult the list in tables I, II, III, and V.
Proteins (Choice of one)
Ripe olives, or unroasted nuts; nothing of animal origin. The soybean products, if not highly seasoned, are very well suited to such conditions, particularly the milk, also dairy cream.
Raw Vegetables
Any may be chosen that agree with the stomach, but do not make use of salad dressings as found in grocery stores as most of them contain vinegar. If that made at home, according to some of the recipes found in the chapter on recipes, seems to agree with the stomach, they may be used; but the fewer the mixtures in foods the better.
Lunch
The lunch may be a repetition of the first or of the second meal, but do not mix the two. After the second week, bread made from the natural flour or corn meal may be included, also butter. The above presents the utmost limit in variety at any meal, and fewer would be still better. After the third week the legumes are added if well cooked, and later buttermilk and cottage cheese. Following the above program, we have seen most gratifying results in severe cases of long standing. One case that came under our notice recently was that of a lady seventy years of age, whose limbs and head were literally covered with eczema; even the scalp was scaly, and the feet and hands and ears were badly swollen. All this was cleared up in three months and the swelling gone through use of the diet above outlined. The sun bath is a great aid in overcoming skin diseases of many types, and was used freely in the above case. In no case should a patient who has once suffered from eczema, and found relief through regulation of the diet, ever return to the use of proteins in the form of meat or any preparation of flesh foods, or to a large use of dairy products.
